Deep dish focaccia
we developed this focaccia from our francese dough.  it is essentially a big chunk of airy, bubbly dough, topped with olive oil and fresh organic rosemary, organic garlic or organic roasted onions.  in our store it is sold in chunks - great for making stuffing and croutons, or slicing for sandwiches.  we also slice it thin and bake it into toast, topped with tangy parmesan regianno cheese and spicy red pepper flakes.

we remember when martha stewart  filmed us making this special bread in 1995.  it comes in different flavor combinations: olive and fresh thyme, roasted onion and fresh rosemary, potato and leek, and many others. made out of francese dough, it is chewy and airy with decadent flavors dancing on top.  the vegetables and herbs are all peeled, chopped and roasted by hand, and almost always organic.

Ingredients:

unbleached and unbromated wheat flour (wheat, malted barley flour), filtered water, natural sourdough starter (wheat flour and filtered water), sea salt.

deep dish rosemary: topped with fresh organic rosemary, extra virgin olive oil, cracked black pepper, sea salt.

deep dish onion: topped with organic onions roasted in extra virgin olive oil, fresh organic rosemary, cracked black pepper, sea salt.

deep dish garlic: topped with fresh organic garlic, fresh organic rosemary, extra virgin olive oil, cracked black pepper, sea salt.

flat rosemary: topped with fresh organic rosemary, extra virgin olive oil, cracked black pepper, sea salt.

flat onion: topped with organic onions roasted in extra virgin olive oil, fresh organic rosemary, cracked black pepper, sea salt.

flat garlic: topped with fresh organic garlic roasted in extra virgin olive oil, fresh organic rosemary, cracked black pepper, sea salt.

flat olive: topped with kalamata olives, fresh organic thyme, extra virgin olive oil, cracked black pepper, sea salt.

flat tomato: topped with fresh organic tomatoes, provolone cheese, fresh organic basil, pignoli nuts, drizzled with organic tomato sauce, extra virgin olive oil, cracked black pepper, sea salt.

flat potato leek: topped with roasted organic red potatoes, organic leeks, sauteed organic garlic, reggianito, fresh organic rosemary, extra virgin olive oil, cracked black pepper, sea salt.

flat caper parsley and red pepper: topped with organic roasted red peppers, sun-dried tomatoes, capers, organic parsley oil (extra virgin olive oil organic fresh parsley and organic lemon juice), cracked black pepper, sea salt.
